Shalom, I am very happy to hear about your interest in the Torah. There are many Yeshivah's in Israel, therefore the find the right fit depends on many factors. Some places would not accept older men, some would not accept non Jews. And of course on your side, it depends on where you would prefer to live, budget, weather you speak Hebrew or will need studies in Hebrew and more more factors. I would suggest to start a research over the internet and once you narrowed the options down I can help make a decision. The most important thing to decide on is to make sure the Yeshivah will guide you to the right info and the right approach, as unfortuantly in todays day of age, many teach Torah and distort the truth and one needs to be very careful.
